What oxygen do fish take from water?
Water contains oxygen in two different forms: oxygen gas dissolved in it, and oxygen chemically bound to hydrogen in water molecules (H2O). Fish use the dissolved oxygen. Their gills do not break apart water molecules to obtain oxygen atoms.
The American Museum of Natural History explains: “The oxygen that fish breathe is not the oxygen that is chemically combined with hydrogen to form water molecules, but oxygen from the air that is dissolved in the water.”
How does water pass over a fish’s gills?
To absorb dissolved oxygen, a fish must move water across its gills. Many bony fish use buccal pumping: coordinated movements of the mouth and gill covers draw water in and push it out past the gills. In some active swimmers, including certain sharks and tunas, swimming helps drive water over the gills. This swimming-driven method is called ram ventilation.

These are common patterns, not a single rule for every fish. Some cartilaginous fish use openings called spiracles to bring water toward the gills, and species differ in how much they rely on mouth movements or swimming.
How do the gills transfer oxygen into blood?
Gill arches support filaments, which carry many thin folds called lamellae. Together, the filaments and lamellae create a large exchange surface. The tissue is thin, and blood flows close to the water passing over it, allowing gases to diffuse across.

Diffusion is movement down a concentration or partial-pressure gradient. Because oxygen’s partial pressure is higher in the water than in the blood arriving at the gills, oxygen moves into the blood. Carbon dioxide moves in the opposite direction—from blood into the water—and is carried away as the water leaves the gills.
Why do water and blood flow in opposite directions?
At the lamellae, water and blood flow in opposite directions. This arrangement is called countercurrent exchange. As the two fluids travel alongside one another, it helps preserve a difference in oxygen partial pressure across the exchange surface, so oxygen can continue diffusing from water into blood along the gill.

The key is the continuing gradient: water brings dissolved oxygen to the exchange surface, while blood carries absorbed oxygen away. The opposing flows help sustain that transfer rather than allowing the two fluids to quickly reach the same oxygen level.

No. Gills are central to oxygen uptake in fish, but the way water reaches them and the extent to which a fish relies on gills vary by species. Some fish also have adaptations that supplement gill breathing or help them tolerate time out of water. Tarpon and mudskippers are examples of fish with non-gill supplements or adaptations; they should not be taken as evidence that all fish breathe alike.

So, “fish open and close their mouths to breathe” describes a familiar pumping pattern in many bony fish, but it does not cover every ventilation strategy. Nor is there one oxygen-extraction percentage that can safely be applied to all fish: estimates differ, and the cited educational figures do not establish common conditions or a universal value.
