Salmon is a roundfish, not a flatfish. Its body is broad and rounded through the middle and tapers at both ends, although it is somewhat flattened from side to side.
Why salmon is classified as a roundfish
“Roundfish” is a common body-shape category, not a claim that a fish is a perfect cylinder. NOAA Fisheries describes Atlantic salmon as spindle-shaped: broad and rounded in the middle, then tapered toward the head and tail. NOAA also notes that the body is somewhat flattened toward the sides, a form typical of salmon species. NOAA Fisheries’ Atlantic salmon description therefore fits the roundfish category despite that side-to-side compression. An educational fisheries curriculum also lists salmon among roundfish. Illinois State Board of Education curriculum
How a flatfish differs
A flatfish is not simply any fish that looks a little flattened. It has a distinctive body plan: its skull is asymmetrical, with both eyes on the same side of the head. Flatfish typically live on or near the bottom, resting with the eyed side facing upward. Oregon Department of Fish and Wildlife’s flatfish overview
Salmon has the conventional fish body form, with an eye on each side of its head. The practical distinction is eye placement and overall anatomy—not whether the body is perfectly round in cross-section.

Does salmon’s migration affect its classification?
No. Body shape and life history are separate ways of describing a fish. Atlantic salmon migrate from freshwater to the ocean to feed and grow, then return to freshwater to spawn; that migration does not make them flatfish. U.S. Fish and Wildlife Service: Atlantic Salmon
