Wheat may accumulate nitrate after drought, frost, unusual heat or other stress. Test each hay lot before feeding, keep damp or mouldy suspect hay out of the ration, and have a veterinarian or extension nutritionist interpret any moderate or high result—especially for pregnant animals or ruminants.
Why wheat hay can become dangerous
The crop name does not determine safety. Nitrate risk depends on the field, growing conditions, cutting and storage lot. Wheat and other cool-season cereals can concentrate nitrate when growth is stressed by drought, frost, unusual heat or similar conditions.
Drying does not remove nitrate. Moisture, heating and mould create an additional hazard because nitrate can be converted to nitrite in wet or damaged feed. Do not try to make suspect hay safe by simply letting it dry longer.
Which animals are most vulnerable?
Cattle, sheep and goats
Ruminants are the main concern. Microbes in the rumen convert nitrate to nitrite. If intake exceeds the rate at which the rumen can process it, nitrite interferes with the blood’s ability to transport oxygen. Risk is affected by species, body weight, pregnancy, health, the rest of the ration and nitrate in drinking water.

Horses
Horses are hindgut fermenters and are generally less sensitive to nitrate itself than ruminants. They can still be harmed by nitrite already present in wet, mouldy or otherwise deteriorated feed. Any suspect wheat hay should therefore be tested and kept out of the ration if it is damp, mouldy or heating.
Do not feed before identifying and testing the lot
- Separate the lot. Record the field, cutting, harvest date and storage area. Bales from different fields, cuttings or visibly different portions should not be treated as one sample.
- Take a representative core sample. Core multiple bales or sampling points with a forage probe. Avoid relying on a handful taken from the outside of one bale.
- Screen for nitrate. A livestock forage nitrate test kit can provide a preliminary result, but it is a screening tool, not a final clearance.
- Confirm suspect results at a forage laboratory. Send moderate, high or uncertain samples for laboratory analysis and ask how the result is reported (nitrate, nitrate-nitrogen, dry-matter or as-fed basis).
- Test the water. Nitrate in drinking water adds to the animal’s total exposure and can change how a hay result should be interpreted.
Do not feed from an untested lot while waiting for results if the crop was harvested under severe stress or shows moisture, mould, heating or other deterioration.

How to interpret nitrate results
Published limits are guides, not universal guarantees. They vary with species, body weight, water nitrate, ration composition, pregnancy and the laboratory reporting basis. A veterinarian or extension nutritionist should apply the result to the actual animals and ration.

Never compare a laboratory number with these figures until you know whether it is nitrate or nitrate-nitrogen and whether it is reported on a dry-forage or as-fed basis. If the report is unclear, ask the laboratory or your adviser before feeding.

When a moderate-nitrate lot may be usable
If a veterinarian or qualified extension nutritionist determines that a tested, dry lot can be used, control the total dose rather than treating the hay as unrestricted forage.
- Introduce it gradually so rumen microbes can adapt.
- Divide the day’s allowance into several feedings.
- Mix it with enough verified low-nitrate forage to keep the total ration within the professional recommendation.
- Do not offer it to animals that are hungry and likely to consume a large amount quickly.
- Provide clean, freely available water and adequate dietary energy.
- Watch animals especially closely during the first hours after each ration change.
These measures reduce exposure; they do not make extremely high-nitrate hay safe.

Hay conditions that require rejection
- Damp, mouldy, heating or musty bales suspected of nitrate contamination.
- Hay from a heavily stressed crop with no representative test.
- A laboratory result in the potentially lethal range.
- A field-kit result that is moderate, high or difficult to read and has not been confirmed.
- A lot whose identity is mixed or unknown, making the sample unrepresentative.
Preventing nitrate problems at harvest
North Dakota State University Extension advises reducing risk during haying by raising the cutter bar above 6 inches, or by monitoring grazing livestock and removing them when plant stubble reaches 6 inches. The lower stem often contains more nitrate, so leaving additional stubble can reduce the amount harvested. This is a risk-reduction practice, not a substitute for testing stressed forage.

- Rapid or difficult breathing
- Weakness, staggering, tremors or collapse
- Blue or chocolate-brown mucous membranes
- Sudden severe illness or death
Breathing difficulty or blue/chocolate-brown mucous membranes is an emergency. Remove access to the suspect feed and contact a veterinarian immediately; do not wait for a field-kit result or attempt home treatment.
How to compare two wheat-hay lots
Choose the lot with the lower demonstrated risk, not simply the lower bale price. Compare:

Practical decision checklist
- Identify the exact wheat-hay lot and its harvest conditions.
- Quarantine suspect bales from feeding areas.
- Core-sample multiple bales and obtain a nitrate screening result.
- Send moderate, high or uncertain samples to a forage laboratory.
- Include water nitrate and the complete ration in the interpretation.
- Reject extremely high-nitrate, damp or mouldy hay.
- If professional advice permits use, dilute, adapt gradually and divide feedings.
- Monitor animals closely and treat respiratory distress or abnormal mucous membranes as an emergency.
