She described being vegan for roughly six years. Her thinking changed after working on Sweetgrass, a PBS documentary about sheep ranchers in Montana, and then gaining practical experience on several farms. Friends’ positive experiences at regenerative livestock operations also showed her a production model she considered meaningfully different from the system she had rejected.

Before starting PearlJack, she worked with livestock directly, including slaughtering and butchering chickens. That experience matters to her transition: she did not move from an abstract opinion about farming straight to selling meat; she learned the daily, physical work involved in keeping, processing and stewarding animals.

“I didn’t really want to be part of that system, and the only thing I could think to do at the time was to opt out,” Gallegos told the profiles. “For me, opting out meant going vegan and not consuming any animal products.”

What does regenerative farming look like on this small farm?

Rotational grazing

Gallegos says she uses intensive rotational grazing, moving sheep to fresh pasture daily when conditions allow. The animals do not remain on one area continuously; the movement is intended to manage grazing pressure and give previously grazed ground time to recover.

Sheep and poultry at different times

The farm reports describe sheep and chickens grazing fields at different times. Gallegos compares the sequence with the way bison once moved through grasslands: different animals use the pasture in succession rather than occupying it all in the same way at once.

Her stated soil-and-plant rationale

Gallegos explains that grazing can stimulate plant root growth, while manure returns nutrients to the soil. Can a former vegan ethically raise animals?

There is no single answer that settles this for every reader. Gallegos’s position is that the ethical question changes when animals are raised in a transparent, pasture-based system connected to a specific place and producer rather than an opaque industrial chain. Her personal standard includes knowing how animals live, how land is managed and where food is sold.

That reasoning may persuade some former or current vegans and not others. A pasture-based claim does not, by itself, establish a particular stocking density, veterinary protocol, slaughter arrangement or lifetime welfare outcome. Consumers who regard killing animals as unacceptable will still reject the model; consumers who object primarily to industrial production may see direct, carefully managed farms as a different ethical choice.

PearlJack markets lamb, poultry and hides directly to consumers. Direct sales can make the producer more visible and give buyers an opportunity to ask about grazing, feed, processing and labeling. Gallegos’s work with the Good Meat Project also centers on helping consumers match their values with producers and interpret production claims.
