What Causes Worms in Cod Fish? Codworms, Safety, and Cooking Rules

Worms in cod are usually parasite larvae from the marine food web. Here is how cod acquire them, when they can harm people, and how cooking or validated freezing controls the risk.

Worms in cod are usually larval parasitic roundworms acquired through the marine food web. The classic “codworm” or “sealworm” is Pseudoterranova decipiens; Anisakis larvae are another relevant group. Cod pick up these larvae by eating infected prey, so the organisms did not form spontaneously in the fillet.

What are the worms in a cod fillet?

A threadlike organism in cod is most likely a parasite larva, but appearance alone cannot identify the species reliably. The U.S. Food and Drug Administration lists Anisakis, Pseudoterranova, Eustrongylides and Gnathostoma among seafood nematodes of concern, alongside tapeworms and flukes.

Pseudoterranova decipiens is commonly called codworm or sealworm because its adult stage normally develops in gray seals, harbor seals, sea lions and walruses. Its larval stages occur in fish. Anisakis larvae are also marine-fish parasites and are associated with human anisakiasis when infected fish is eaten raw or undercooked.

How do worms get into cod?

The route is a normal marine food web. Parasite larvae move through prey species and are eaten by larger fish. NOAA’s Pacific cod diet includes clams, worms, crabs, shrimp and juvenile fish, any of which can provide a route for exposure when prey carry larvae. The larvae can then be present in the cod’s body cavity or muscle.

Can codworms make people sick?

Yes, if live larvae are swallowed in raw or undercooked cod. The CDC describes anisakiasis as ingestion of larvae of several ascaridoid roundworm species—sometimes called herringworm, codworm or sealworm—in undercooked marine fish. Possible illness can involve acute gastrointestinal symptoms, and some people can also have allergic reactions.

Why killing the worm does not remove every allergy risk

Freezing or cooking kills larvae, but parasite antigens can remain in fish muscle. CDC notes that those residual antigens can trigger allergic reactions in some individuals even after the larvae have been killed. Anyone who develops severe allergic symptoms after eating fish should seek emergency medical care.

Is cod with a worm safe to eat after cooking?

Cooking is the most dependable household control. Cook cod until the thickest part reaches an internal temperature of at least 145°F (about 63°C), checking with an instant-read thermometer. At that temperature, the parasites are killed. Remove any visible worm before cooking, but do not rely on visual removal or appearance as a safety test.

Practical cooking check

  1. Insert an instant-read thermometer into the thickest portion of the fillet, avoiding the pan or bone.
  2. Verify that the center reaches 145°F (63°C).
  3. If it has not reached that temperature, continue cooking and check again.

Can freezing cod kill worms?

Validated freezing can control parasites when fish will be eaten raw, but the freezer must reach the required temperature for the full holding time. CDC lists these schedules:

These are time-and-temperature controls, not an instruction to place fish in a typical home freezer for an unspecified period. FDA says effectiveness also depends on tissue thickness, fish species and source, the freezing process, and the parasite type. Freezing does not kill every harmful germ, so thorough cooking remains the safest option.

What should you do if you find a worm?

  • Do not eat the cod raw or partly cooked.
  • Discard the visible organism and cook the fish to 145°F (63°C), or follow your retailer’s food-safety guidance.
  • If the fish smells spoiled, is slimy, or has other signs of deterioration, discard it rather than trying to salvage it.
  • For raw dishes, use fish handled under a validated parasite-control process; an ordinary home-freezer estimate is not enough.
  • Seek medical advice if you develop significant abdominal pain, vomiting, rash, swelling or breathing difficulty after eating undercooked fish.

Why do some cod fillets have little white strings?

Small white or threadlike structures may be parasite larvae, but connective tissue, blood vessels or other natural structures can look similar. Casual inspection cannot establish an exact identity. Because raw or undercooked fish is the exposure route for anisakiasis, treat an uncertain finding as a reason to cook the fish thoroughly rather than relying on visual identification.
