In the UK, “rock salmon” is a trade name for a group of small sharks—not true salmon. The current UK commercial-designation list groups it with dogfish, flake, huss, rigg and rock eel, and maps the group to species in Scyliorhinus or Galeus melastomus. The label does not identify one exact species.
What fish is rock salmon?
In the UK, “rock salmon” is one of several commercial names used for a dogfish or small-shark group. Defra’s Commercial designations of fish: United Kingdom, updated 23 January 2026, groups the name with “dogfish,” “flake,” “huss,” “rigg” and “rock eel.” The designation covers all species of Scyliorhinus or Galeus melastomus; it does not mean that every fish sold as rock salmon is the same species.
Is rock salmon actually salmon?
No. Despite the name, rock salmon is not a salmon. In the UK trade designation, it refers to the dogfish and small-shark group described above. The name is a market label, not a reliable indication of a single species.
What does “rock salmon” mean on a menu or at a fish counter?
The exact fish can be unclear from the name alone. The Marine Conservation Society (MCS) notes that several small shark species may be sold under generic names such as “rock salmon,” “rock” and “huss.” If you want to know which fish is being served or sold, ask the restaurant or fishmonger for the species.

Naming conventions also vary by country. The US FDA Seafood List associates “rock salmon” with small-spotted catshark (Scyliorhinus canicula) under the name “Common Dogfish.” That US reference is not interchangeable with the broader UK commercial designation.
Is rock salmon sustainable?
The name alone is not enough to give a dependable sustainability verdict. MCS’s Good Fish Guide offers guidance for lesser-spotted dogfish, but that species-specific advice cannot automatically be applied to every fish sold as rock salmon. First ask for the species; then check advice that matches both the species and its source. Without that information, a precise rating is not established.

Is rock salmon safe to eat?
A Food Standards Agency contaminants-monitoring search result includes one sample labelled “Rock salmon – dog fish,” dated 10 May 2022. That isolated entry does not establish a general health or contaminant conclusion for all fish sold as rock salmon, nor does it provide a basis for a general safety warning.
