Yes—if by “freshwater sheepshead” you mean freshwater drum (Aplodinotus grunniens), state wildlife agencies describe it as good to eat. Its flesh is described as mild and flaky, and North Dakota Game and Fish recommends trimming the thin red, fatty layer along the skin side. For a wild-caught fish, however, check the current consumption advisory for the specific water where it was caught; general edibility does not establish catch-specific safety.

First, make sure it is freshwater drum

“Sheepshead” is a common name that can refer to different fish. North Dakota Game and Fish uses it as another name for freshwater drum, Aplodinotus grunniens. Its identification page describes the drum as silver-gray and deep-bodied, with a long dorsal fin and rounded tail; it can be confused with white bass. Confirm the species before applying freshwater-drum advice. North Dakota Game and Fish identification guide.

What freshwater drum tastes like

A NOAA-hosted Alabama fisheries publication describes freshwater drum meat as white, flaky, and light-tasting, with relatively few bones. That is a general description, not a promise about every fish: freshness, handling, and preparation can affect the result. Alabama fisheries publication hosted by NOAA.

Historical surveys offer some context, but their results apply to particular samples and preparations—not to current diners as a whole:

  • In a 1979 Ohio State University campus survey reported by Ohio Sea Grant, 84 percent of participants rated the flavor of breaded drum fillets average to very good, and 92 percent said they planned to eat drum in the future.
  • In an Ohio Sea Grant report on a 1981 Cleveland Sports Show survey, 74 percent of 423 respondents could not detect a fishy taste in the specific “Poor Man’s Shrimp” preparation.

These figures are historical and recipe-specific; they are not a controlled comparison with other fish or a guarantee of personal preference. NOAA-hosted freshwater drum publication discussing the surveys.

How to prepare it

Trim the red layer

North Dakota Game and Fish calls drum excellent to eat after removing the thin layer of red, fatty meat on the skin side of the flesh. Trimming it is a food-quality recommendation, not a substitute for checking a catch advisory. North Dakota Game and Fish preparation guidance.

Choose a cooking method you like

West Virginia’s DNR describes a regional option: cut the fish into seasoned strips or fish fingers, briefly boil them, drain and chill, then serve with cocktail sauce. It is a recipe suggestion, not a safety rule or the only way to cook drum. West Virginia Division of Natural Resources freshwater drum information.

If you plan to fillet a catch, a fish fillet knife can make that task easier, but no particular knife or model is required. Historical preparation material includes filleting and cooking demonstrations; it does not establish a required tool or cooking time. NOAA-hosted freshwater drum publication.

Check the advisory for the water where it was caught

Whether freshwater drum is edible in general and whether a particular wild fish is advisable to eat are separate questions. The FDA recommends checking fish and shellfish advisories for fish caught by family or friends. Look up the current guidance for the specific lake, river, or reservoir before serving a catch. FDA advice about eating fish.

Advisories can depend on location, fish size, and the person eating the fish. For example, Iowa’s guidance for sensitive populations lists freshwater drum under 17 inches as a Best Choice and drum over 17 inches as a Good Choice. Those categories and size thresholds apply to Iowa’s guidance; do not use them as rules for other states or waters. Iowa DNR also explains that contaminants can accumulate in skin, fat, and organs and recommends eating fillets and removing those tissues. Consult Iowa’s advisory for its full scope and current details. Iowa DNR fish consumption advisories.

People who are pregnant or breastfeeding, and anyone choosing fish for children, should use current FDA/EPA advice alongside the local catch advisory. The federal guidance is organized by fish categories and mercury levels and specifically addresses those audiences. FDA advice about eating fish.
