What people call “codworms”

“Codworm” and “sealworm” are informal names for larvae of anisakid nematodes, a group of marine roundworms. Relevant parasites include Anisakis, Pseudoterranova—including the Pseudoterranova decipiens complex—and Contracaecum.

These parasites normally move through marine food webs. Marine mammals such as seals can host adult worms, while fish can carry larval stages after eating infected prey. Humans are accidental hosts when they eat infected marine fish raw or undercooked. The parasites are therefore a natural part of some marine ecosystems, not evidence by itself that a cod product was spoiled.

How common are worms in cod?

There is no single worldwide percentage that tells you how many cod have worms. Prevalence varies according to:

  • the cod species and population;
  • where the fish was caught, particularly whether seals and other marine mammals frequent the area;
  • the fish’s age and size;
  • the season and local food web;
  • whether researchers examine the liver, internal organs, or muscle; and
  • whether the fish is wild or farmed and how it entered the supply chain.

Some individual studies show why broad claims are misleading. In one study of 200 Atlantic cod livers from West Greenland, anisakid larvae were found in 97% of the livers examined. That is strong evidence of very high infection in that particular organ and fishery—not evidence that 97% of all cod everywhere are infected, and certainly not proof that every cod has a worm.

A separate peer-reviewed study of Northeast Atlantic cod sold at retail found anisakid larvae in a substantial proportion of sampled fillets and assessed additional candling as a way to reduce visible larvae. Again, the result applies to that defined sample and supply chain rather than to every cod sold worldwide.

The most accurate summary is: some cod carry worms, and the rate can be high in particular populations, but not every cod is infected and not every infected fish has a visible worm in its fillet.

Where are worms found in a cod?

Anisakid larvae may be present in a fish’s internal organs and can also occur in muscle tissue. The West Greenland study found especially high prevalence in cod livers, while food-safety guidance focuses on muscle because that is the part most likely to be sold as a fillet and eaten.

Some countries and seafood businesses use candling: fillets are placed over or against a light so that visible parasites may be easier to detect. Inspection and candling reduce the chance that a customer will see a worm, but they are not perfect. The Canadian Food Inspection Agency specifically cautions that these methods are not 100% effective, so an infected fillet can still reach the market.

Is cod with a worm safe to eat?

The important distinction is whether the cod is raw or thoroughly cooked.

Eating live anisakid larvae in raw or undercooked marine fish can cause anisakiasis. Possible symptoms include abdominal pain, nausea, vomiting, diarrhea, and allergic reactions. Symptoms after a seafood exposure can have other causes too, but anyone who becomes ill after eating raw or undercooked cod should tell a healthcare professional about the fish exposure.

For an ordinary cooked cod meal, the practical safeguard is to cook the fish to an internal temperature of 145°F (63°C). Check the thickest part of the fillet. Proper cooking kills anisakid larvae as well as controlling important bacterial hazards.

A visible worm may be dead after cooking, but that does not mean you should simply ignore it. Remove the affected material, do not eat the visibly contaminated portion, and contact the retailer if you find it before preparation. A worm’s presence alone does not prove that the fish is spoiled.

A instant-read food thermometer makes it easier to confirm that the thickest part of the cod reaches 145°F. It verifies temperature; it does not detect, identify, or remove worms.

Does freezing kill codworms?

Validated freezing can kill anisakid parasites, but both the temperature and the time matter. The CDC lists these FDA parasite-control schedules for fish:

  • −4°F (−20°C) or below for seven days continuously;
  • −31°F (−35°C) or below until the fish is solid, then held at −31°F (−35°C) or below for 15 hours; or
  • −31°F (−35°C) or below until solid, then held at −4°F (−20°C) or below for 24 hours.

These are controlled time-and-temperature procedures, not a general promise that any frozen cod is safe to eat raw. The fish must reach the required temperature throughout. FDA guidance cautions that a protocol may not be suitable for especially thick pieces unless the full product reaches the required conditions.

Do not treat ordinary refrigeration, a short stay in a home freezer, or a package’s “previously frozen” label as proof that a raw preparation has met one of these schedules. A household freezer’s advertised setting also does not establish the temperature at the center of a thick fillet for the full required duration.

Does marinating or pickling kill codworms?

No—not reliably. Marinating, pickling, brining, cold-smoking, and similar treatments may reduce some hazards, but FDA guidance does not treat brining or pickling as guaranteed parasite controls. Acid, salt, smoke, and refrigeration should not be used as substitutes for thorough cooking or a properly validated freezing process.

Cooking versus freezing: which is better?

Situation Safer approach Important limitation
Cod will be served cooked Cook the thickest part to 145°F (63°C). A thermometer confirms heat; it does not inspect the fish for worms.
Cod will be served raw Use fish handled under a properly validated parasite-control freezing process. Brief home freezing, refrigeration, marinating, and pickling are not equivalent guarantees.
A visible worm is found Stop eating the affected portion, document it, and contact the retailer. A photograph cannot reliably identify the parasite or establish spoilage.

For most home cooks, thorough cooking is the simplest and most dependable option. If cod is intended for a raw dish, the relevant question is not merely whether it was once frozen, but whether the fish was frozen using a validated process that reached the required time and temperature throughout the product.

What should you do if you find a worm in cod?

  1. Stop eating the affected portion. Set it aside rather than trying to determine its identity yourself.
  2. Take clear photographs. Include the fillet and, if possible, the object beside a familiar size reference.
  3. Keep the packaging and purchase details. Retain the label, lot information, receipt, and remaining product if the retailer or food-safety authority requests them.
  4. Contact the retailer. Ask how the product should be handled and whether the business wants the item returned or retained.
  5. Contact your local food-safety authority if the retailer cannot resolve the concern or if several packages appear affected.

Do not try to identify the species from a photograph or text description alone. A visible object may be a parasite, connective tissue, or another piece of material, and reliable identification may require laboratory examination.

When to seek medical help

Contact a healthcare professional if you develop symptoms after eating raw or undercooked cod, especially significant or persistent abdominal pain, repeated vomiting, diarrhea, blood or mucus in the stool, or signs of an allergic reaction. Breathing difficulty, swelling of the lips or throat, faintness, or a rapidly worsening allergic reaction requires urgent medical attention.

Tell the clinician what seafood you ate, whether it was raw or undercooked, and when you ate it. CDC information notes that diagnosis may involve endoscopic visualization and removal of a larva. Allergic reactions can sometimes occur even after larvae have been killed because allergenic material may remain.

Common misconceptions about worms in cod

  • “Every cod has worms.” Not supported. Infection varies by population, tissue, geography, and supply chain.
  • “A worm means the cod is rotten.” Not necessarily. Nematodes can be a natural parasite issue rather than a spoilage sign.
  • “Any freezing makes cod safe to eat raw.” Incorrect. The full validated time-and-temperature schedule matters.
  • “Marinating or pickling kills everything.” Not a dependable parasite-control method.
  • “Candling guarantees a worm-free fillet.” No inspection method catches every parasite.
  • “A thermometer detects worms.” No. It only confirms whether the fish reached the target cooking temperature.

The practical answer for home cooks

You do not need to assume that every cod contains worms, and you should not interpret a visible worm as automatic proof of spoilage. Buy cod from a reputable source, inspect it during preparation, and cook it to 145°F (63°C) in the thickest part. If you plan to serve cod raw, rely on documented, validated parasite-control freezing rather than a short freeze or a marinade.

Sources and evidence

This guidance is based on food-safety information from the U.S. Food and Drug Administration, parasite and anisakiasis information from the U.S. Centers for Disease Control and Prevention, Canadian Food Inspection Agency guidance on seal worms, and peer-reviewed studies of anisakid prevalence in cod livers and retail cod fillets. Prevalence findings from individual fisheries or tissues should not be generalized to every cod.

Frequently Asked Questions

Do all cod fish have worms?

No. Some cod naturally carry anisakid larvae, commonly called codworms or sealworms, but infection varies by species, location, fish size, tissue, and supply chain. High prevalence in one fishery or organ does not mean every cod is infected.

How do you kill worms in cod?

Cook cod to an internal temperature of 145°F (63°C) in the thickest part. Proper cooking is the simplest household control for parasite risk.

Does marinating cod kill worms?

Not reliably. Marinating, pickling, brining, cold-smoking, and ordinary refrigeration should not be treated as guaranteed parasite controls.

What should I do if I feel sick after eating cod?

Contact a healthcare professional, particularly for severe abdominal pain, persistent vomiting, allergic symptoms, blood or mucus in stool, or breathing difficulty. Mention that you ate raw or undercooked seafood.

The Bottom Line

Bottom line: No, not all cod have worms. Some marine cod carry anisakid larvae, sometimes at high rates in particular fisheries or organs, but infection is not universal. Cook cod to 145°F (63°C) in the thickest part; for raw cod, use only a properly validated parasite-control freezing process. Marinating, brief freezing, and ordinary refrigeration are not reliable substitutes.
