The episode visits Fading D Farms in Salisbury, North Carolina, where water buffalo are raised for milk used in mozzarella and gelato. These are domestic farm animals—not American bison roaming a wild range.
What is “Where the Water Buffalo Roam” about?
The episode asks: “Water buffalo are native to Asia — so what are they doing on a farm in Salisbury, North Carolina?” Its answer is a small-scale food story: Fading D Farms raises water buffalo and makes dairy products from their milk. The official series page identifies the program as Season 3, Episode 1 and mentions milk, mozzarella, gelato, and meat.
The title can also be mistaken for a general phrase, lyric, or wildlife story. Here, the strongest documented match is the television episode and the North Carolina farm it features; the title alone does not uniquely identify a separate book, film, or song.
Why raise water buffalo in North Carolina?
Water buffalo are native to Asia, but they can be raised elsewhere. At Fading D Farms, the central agricultural purpose is milk for mozzarella di bufala and gelato. A 2021 Successful Farming profile says owners David and Faythe DiLoreto became interested in making fresh mozzarella after encountering it in Italy and finding they could not get the product they wanted at home.

Water buffalo are not American bison
The water buffalo in the episode are a different animal from American bison. In North America, people commonly call bison “buffalo,” but that familiar name does not make them the same species. PBS’s terminology explainer discusses the distinction and the history behind the common American usage.

Water-buffalo dairying beyond North Carolina
North Carolina is not the only place in the United States covered in reporting about water-buffalo dairying. A 2019 High Country News feature profiled Colorado rancher José Miranda, whose herd supplied milk for mozzarella di bufala. The article described his leased-land and mobile-milking approach at that time. It also reported that he began building his herd after Colorado removed water buffalo from its exotic-species category in 2014; that is historical context, not current legal guidance.

The two farm stories illustrate different settings, not a complete picture of the industry. A handful of reported farms cannot establish how water buffalo are generally housed, grazed, or milked, and current business details may change.
What can—and cannot—be concluded about buffalo milk?
These sources establish a culinary use for water-buffalo milk, particularly mozzarella, and describe gelato as another product at Fading D Farms. They do not provide an independent, controlled comparison establishing health effects or nutritional advantages over cow’s milk.

Those figures are his reported claims in the 2019 feature, not independently verified findings there. They should not be treated as a general nutrition conclusion or health recommendation.
