Can You Make Worms Come Out of Fish? What Actually Makes Fish Safe

No FDA-supported home trick reliably makes worms leave fish or makes the fish safe. FDA recommends cooking most seafood to 145°F; raw or undercooked fish requires an appropriate controlled parasite-destruction process.

No FDA-supported home trick reliably makes worms leave fish or makes the fish safe. Removing a visible worm does not prove that no other parasites remain; the dependable controls are thorough cooking or a controlled parasite-destruction freezing process for fish intended to be served raw or undercooked.

Most seafood should be cooked to an internal temperature of 145°F, according to FDA consumer guidance. Visual inspection, pickling, and brining do not establish that fish is safe from parasites.

Key takeaways

  • No validated household method reliably forces worms out of fish as a safety measure.
  • FDA says most seafood should reach an internal temperature of 145°F. A food thermometer helps check the thickest part.
  • Freezing can control parasites under specified time-and-temperature conditions, but processor schedules should not be treated as a casual home-freezer rule.
  • Removing a visible worm may remove that object, but inspection cannot prove the rest of the fish is parasite-free.
  • FDA says pickling and brining may reduce parasite hazards but do not eliminate them or lower them to an acceptable level.
  • Freezing does not kill all harmful germs; cooking is the safest general choice in FDA consumer advice.

Can you make worms come out of fish?

No. There is no FDA-supported household trick that reliably makes worms leave fish and thereby makes the fish safe. Salt water, vinegar, soaking, or removing a visible worm should not be treated as a complete safety control. Inspecting fish may reveal some visible parasites, but visual inspection or candling is not adequate to avoid parasite risk in fish that has not been frozen, according to the FDA Food Code.

The dependable choices are thorough cooking or, for fish intended to be served raw or undercooked, a controlled parasite-destruction freezing process appropriate to the fish and its handling. Freezing does not address every foodborne hazard.

What should you do if you find a worm in fish?

If you find a worm in fish, do not assume that removing it makes the fish safe to eat raw or undercooked. Use these steps:

  1. Pause raw or lightly cooked preparation. Do not rely on removing the visible worm as proof of safety.
  2. Inspect the fish. Inspection may reveal visible parasites, but it cannot establish that none remain.
  3. Remove or discard visibly affected material if you choose. Treat this as handling the visible object, not as a substitute for a safety control.
  4. For the simplest consumer safety route, cook the fish thoroughly to an internal temperature of 145°F, as FDA recommends for most seafood.
  5. Handle raw seafood safely. Wash hands and equipment after handling raw seafood, and keep it separate from ready-to-eat food, following FDA safe-seafood guidance.

What temperature should fish be cooked to?

FDA says most seafood should be cooked to an internal temperature of 145°F. Check the thickest part with a food thermometer; this is more dependable than judging temperature by appearance alone.

An instant-read food thermometer is a useful cooking aid for checking the fish’s temperature. It does not detect or remove parasites. Cooking remains the simplest general consumer advice because FDA notes that freezing does not kill all harmful germs.

Can you freeze fish to kill worms?

Controlled freezing can destroy parasites under specified conditions, including for fish intended to be served raw or undercooked. However, FDA’s listed schedules are process controls from industry guidance, not a guarantee that an ordinary household freezer or an informal overnight freeze is equivalent. Fish thickness, the time needed for the center to freeze, and equipment and process monitoring matter. FDA cautions that the schedules may not work for particularly large fish, such as fish thicker than 6 inches.

FDA’s June 2022 industry guidance lists these schedules:

FDA guidance schedule Required time and temperature Important limitation
Option 1 −4°F (−20°C) or below for 7 days total A controlled process is required; do not assume an ordinary home-freezer routine is equivalent.
Option 2 −31°F (−35°C) or below until solid, then at −31°F (−35°C) or below for 15 hours Requires equipment and monitoring capable of maintaining the specified conditions.
Option 3 −31°F (−35°C) or below until solid, then at −4°F (−20°C) or below for 24 hours Freezing time, fish thickness, and controlled temperatures matter.

These schedules address parasite control, not every raw-fish hazard. FDA warns that freezing does not kill all harmful germs, so cooking is the safer general choice for ordinary home consumption. For raw or undercooked fish, use fish handled under an appropriate controlled process rather than assuming that a home freeze is sufficient.

Will salt water, vinegar, pickling, or brining make worms leave fish?

No. Salt water, vinegar, pickling, and brining should not be treated as ways to make worms come out of fish or as complete parasite controls. FDA’s 2022 Fish and Fishery Products Hazards and Controls Guidance says brining and pickling may reduce parasite hazards, but do not eliminate them or lower them to an acceptable level.

Does removing a visible worm make fish safe?

No. Removing a visible worm may remove that worm, but it does not establish that the fish contains no other parasites. FDA’s Food Code says candling or other visual inspection techniques are not adequate to avoid parasite risk in fish that has not been frozen. Inspection is not a substitute for cooking or a controlled parasite-destruction freezing process.

What is the safest choice for cooked versus raw fish?

Preparation What to do What inspection or processing can and cannot establish
Cooked fish For most seafood, cook to an internal temperature of 145°F, following FDA consumer guidance. Inspection may reveal visible parasites but cannot prove the fish is parasite-free.
Raw or undercooked fish Use fish processed under an appropriate controlled parasite-destruction freezing process. Do not assume an informal home-freezer schedule is equivalent; freezing also does not kill all harmful germs.
Pickled or brined fish Do not rely on pickling or brining as a complete parasite control. FDA says these methods may reduce parasite hazards but do not eliminate them or lower them to an acceptable level.

FDA advises pregnant people, children, older adults, and people with weakened immune systems to avoid raw or undercooked fish. For the safest general home-preparation choice, cook seafood thoroughly.

What should you do after eating fish with a possible worm?

This article cannot identify a parasite in an individual fish or assess a specific exposure. If you are concerned after eating raw or undercooked fish, or develop symptoms, contact a medical professional or local public-health authority for advice rather than trying to diagnose or treat the problem at home.
