Fresh cod may have a mild, clean seafood odor, but it should not smell strongly fishy, sour, rancid, or ammonia-like. Do not eat cod with those warning odors or taste it to check; discard it. A normal smell does not prove fish is safe if it was stored improperly.

To assess cod, consider its odor, firmness and edges, and time-temperature history together. FDA guidance applies to fish and seafood generally, not to a cod-specific odor threshold.

Key takeaways

  • FDA says fish should smell fresh and mild, not fishy, sour, or ammonia-like.
  • FDA advises not eating seafood with sour, rancid, or fishy odors; reject cooked seafood with either a fleeting or persistent ammonia odor as well.
  • Fresh fillets should have firm flesh that springs back when pressed, without discoloration, darkening, or drying around the edges. Color alone does not establish freshness.
  • U.S. FDA guidance says to refrigerate seafood you plan to use within two days at 40°F (4.4°C) or below. USDA FSIS says raw fish should be refrigerated at or below that temperature for 1 or 2 days before cooking or freezing.
  • Normal smell and appearance cannot rule out danger from fish held too long at unsafe temperatures.
  • FDA says most seafood should reach an internal temperature of 145°F when cooked. A thermometer checks cooking temperature, not freshness.

Is cod a smelly fish?

Cod may have a mild, clean seafood smell. FDA’s general guidance for fish is: “Fish should smell fresh and mild, not fishy, sour, or ammonia-like.” This is not a cod-specific odor threshold; it is practical guidance for recognizing an abnormal smell.

A strong fishy, sour, rancid, or ammonia-like odor is a warning sign. FDA says not to eat seafood with sour, rancid, or fishy odors. For official buying and handling advice, see the FDA’s guidance for selecting and serving fresh and frozen seafood.

How can you tell if cod has gone bad?

Check odor, physical condition, and storage history together. No single normal-looking or normal-smelling cue guarantees that fish is safe.

What to check Freshness cue Warning sign or limit
Odor Fresh and mild Fishy, sour, rancid, or ammonia-like odor; do not eat seafood with sour, rancid, or fishy odors
Firmness Firm fillet flesh that springs back when pressed Questionable texture, especially alongside other concerns
Fillet edges No discoloration, darkening, or drying around the edges These changes are cues to consider, but color alone does not determine freshness
Time and temperature Kept refrigerated at 40°F (4.4°C) or below Unsafe or uncertain storage history can make fish dangerous even if it looks and smells normal

These are general fish and seafood guidelines from the FDA. If handling history was unsafe or is uncertain, do not use a smell test to decide that the fish is safe.

Can you eat cod that smells fishy?

Do not eat cod with a strong fishy, sour, or rancid odor. FDA says, “If you smell sour, rancid, or fishy odors in raw or cooked seafood, do not eat it.” Do not taste questionable fish or try to mask its odor with lemon, seasoning, rinsing, or cooking.

How long does cod last in the fridge?

According to U.S. FDA guidance, refrigerate seafood you intend to use within two days in a clean refrigerator at 40°F (4.4°C) or below. USDA Food Safety and Inspection Service guidance says raw fish should be refrigerated at or below 40°F (4.4°C) for 1 or 2 days before cooking or freezing. These are U.S. recommendations; follow applicable local guidance where you live.

If cod has been held too long at unsafe temperatures or its storage history is uncertain, discard it even if it looks and smells normal. The FDA’s food-storage guidance explains why sensory checks alone are not a safety test.

Should cod smell when you cook it?

Cod may give off a mild seafood aroma during cooking. A strong fishy, sour, or rancid odor is a reason not to eat the seafood, and an ammonia odor in cooked seafood is also a warning sign. Do not cook questionable fish to see if the smell goes away.

Cooking temperature and freshness are separate questions. FDA guidance says most seafood should reach an internal temperature of 145°F. An instant-read food thermometer can help check temperature, but it cannot determine whether cod is fresh or safe after poor handling.

Fresh cod versus frozen cod

Fresh and frozen cod both need appropriate handling. Use the same caution about odor and storage history; a normal smell is not proof of safety.

Can cod be unsafe even if it does not smell bad?

Yes. Food held too long at unsafe temperatures may be dangerous even when it looks and smells normal. A mild odor can be reassuring about freshness, but it does not prove safety.

Use safe refrigeration, careful handling, and thorough cooking alongside sensory checks. The FDA explains that appearance and smell are not complete food-safety tests.

What should you do if cod smells suspicious?

  1. Do not taste the cod.
  2. Do not try to rescue it by rinsing, seasoning, marinating, or cooking.
  3. Discard cod with a sour, rancid, or strong fishy odor; reject cooked seafood with an ammonia odor.
  4. If storage was unsafe or uncertain, discard the fish even if it smells and looks normal.
  5. Wash your hands and clean surfaces and utensils that touched raw fish.
