Six of eight interviewed attendees met the case definition for trichinellosis after a 2022 family gathering where black-bear meat was served rare. The CDC report linked the outbreak to Trichinella nativa in the meat; it did not document brain infection in the affected family members. Freezing wild game may not kill every Trichinella species, so cook it thoroughly and check its internal temperature with a food thermometer.
What happened at the bear-meat gathering?
The meal took place in 2022, and the CDC report was published on May 23, 2024. Nine extended family members from Arizona, Minnesota, and South Dakota gathered in South Dakota for a meal that included kabobs made with black bear (Ursus americanus) harvested in northern Saskatchewan, Canada. The meat had been frozen for 45 days, grilled with vegetables, and initially served rare. Its dark color made doneness difficult to judge by appearance. After some diners noticed it was undercooked, the meat was cooked again.
Six days before the index patient’s symptoms began, the gathering took place. The CDC report describes the initial patient’s illness and the investigation that identified five additional cases. Investigators found motile larvae in leftover bear meat and identified them as Trichinella nativa.

How many people became sick?
Among eight interviewed attendees, six met probable or confirmed case criteria. Not everyone who became ill had eaten bear meat.

Four cases were among people who ate bear meat and vegetables; two were among people who ate only vegetables cooked with it. The affected people lived in Arizona, Minnesota, and South Dakota, and all six recovered. The ninth attendee was not among the eight interviewed. These figures are reported by the Centers for Disease Control and Prevention (CDC, 2024).
What is trichinellosis?
Trichinellosis, also called trichinosis, is an infection caused by roundworms in the genus Trichinella. People acquire it by eating raw or undercooked meat containing infective larvae. The larvae can move from the digestive tract into muscle, causing muscle-associated illness.
Bear and other wild-game meat can carry Trichinella, though not every animal is infected. The CDC overview explains the infection and its diagnosis.

Did the family really have “brain worms”?
The CDC report documented trichinellosis linked to bear meat; it did not report brain infection in the affected family members. “Brain worms” is therefore a misleading description of this outbreak.

The report describes cases associated with contaminated meat and does not document worms in patients’ brains. Keep that conclusion scoped to this investigation: it does not mean Trichinella can never affect organs beyond muscle. Trichinellosis is also distinct from neurocysticercosis, which is caused by larvae of the pork tapeworm, Taenia solium. See the CDC explanation of cysticercosis.
Why did freezing the bear meat fail?
The meat had been frozen for 45 days, but freezing wild game is not a dependable way to kill every Trichinella species. Trichinella nativa, the species identified in this outbreak, is freeze-resistant. CDC investigators found motile larvae in the tested meat. That does not mean every bear is infected; it shows that freezing time alone cannot establish that wild-game meat is safe.

CDC advises that adequate cooking is the only reliable way to kill Trichinella in wild-game meat. Its prevention guidance recommends a food thermometer and cautions about freezing and other processing methods.
How could people who ate only vegetables become ill?
The two vegetable-only cases were consistent with cross-contamination: raw bear meat or its juices may have reached vegetables during preparation or cooking. The report does not establish which utensil, surface, or ingredient transferred contamination. The vegetables were not reported as independently testing positive.
Trichinellosis does not spread from person to person. Keep raw meat and its juices separate from vegetables and other ready-to-eat foods, and use clean utensils and preparation surfaces.

What symptoms should people watch for?
Trichinellosis can cause illness after eating raw or undercooked wild game, but symptoms alone do not establish the diagnosis. The outbreak report describes symptoms including muscle pain, fever, gastrointestinal symptoms, headache, and swelling around the eyes among the affected people.
Anyone who develops compatible symptoms after eating wild game should speak with a healthcare provider and explain what was eaten and when. CDC notes that early antibody testing can miss cases, so a provider may consider the exposure history and follow-up testing. - Cook wild-game meat thoroughly. CDC recommends cooking meat to safe internal temperatures and checking with a food thermometer; it identifies adequate cooking as the only reliable way to kill Trichinella.
- Do not rely on color to judge whether bear meat is cooked through.
- Keep raw meat and its juices away from vegetables and other foods that will be served without further cooking.
- Use clean utensils and preparation surfaces to prevent cross-contamination.
- Do not assume freezing, curing, drying, smoking, or microwaving alone has killed the parasite.

Can bear meat carry trichinellosis?
Yes. Bear meat can contain Trichinella larvae, though not every bear is infected. The 2022 CDC investigation identified T. nativa in meat linked to the family outbreak.

Can vegetables transmit trichinellosis?
Vegetables can be exposed if raw meat or its juices contaminate them during preparation. Two people in the family outbreak who reported eating only vegetables cooked with the meat became cases.
